Pepper Hash
1 doz green peppers
1 doz red and yellow peppers
3 large onions, chop very fine
cover with boiling water, let stand 10 minutes,
drain, cover again with boiling water
let stand again 10 minutes, drain very dry
add 3 table spoons salt
2 pints vinegar
2 cups granulated sugar

Directions: cook 15 minutes, pack into jars

Delicious PA Dutch Fudge
1 cup brown granulated sugar
1 cup sugar
2/3 cup condensed milk
2 squares unsweetened chocolate
2 tablespoons butter
2 tablespoons corn syrup
1 teaspoon vanilla
1 cup nutmeats, chopped

Directions: Cut chocolate in small peices and cook with brown and white sugar, milk and corn syrup. Stir until sugar is disolved. Then cook stirring occasionally until fudge forms a soft ball when dropped in cold water.

Notes: Remove from fire, add butter and let stand until cool. Then beat until it gegins to lose its glossy appearance. Add vanilla and nutmeats and pour on greased pan to cool.

Directions: boil water & sugar, skim-add pineapple and boil 25 minutes

Directions: Since Mary Ann Long nee Fink was born in 1862, this recipe was probibly made on a wood cook stove or over an open fire and has no cooking instructions.

4 lbs seeded sour cherries

1 1/2 cups water

Directions: let water and sugar boil 10 minutes, then put cherries in. Let boil 30 minutes

Pickling Meat
11 gallons water
16 pts salt
5 lbs sugar
2 oz saltpetre
cook day before using
salt meat 3 days before you put it on
100 lbs meat
4 lbs salt
5 lbs sugar
4 gallons water
1/2 oz perlash

Directions: boil and scim and when cold, pour on meat.

Notes: I don't completely understand this recipe, but I think she cured the meat by cooking it in one salt mixture, then pickled it by pouring the other mixture over it.

PA Dutch Rasberry Vinegar
4 pounds Rasberries
2 cups vinegar
sugar

Directions: Mash berries and add vinegar. Let stand 4 days. To each cup of liquid, add 1 cup sugar. Bring to boil and cook 20 minutes. Strain and put in jars.

Directions: pack cold

PA Dutch Dill Pickles
10 quarts water
2 cups salt,
1 quart vinegar
4 tablespoons pepper.
5 stalks dill
cucumbers
Fill crock with cucumbers placing dill between layers of cucumbers.
Onions or garlic may be added if desired.

Directions: Fill crock with cucumbers placing dill between layers of cucumbers.

Notes: Make a strong solution with the water, salt, vinegar and pepper. Bring solution to a boil and while still hot, pour over cucumbers.

More Notes: Cover crock and let stand several days before using.

Directions:

Notes: I don't completely understand this recipe, but I think she cured the meat by cooking it in one salt mixture, then pickled it by pouring the other mixture over it.

Old Bread Pudding
2 cups milk
4 cups bread crumbs
1/4 teaspoon melted butter
1/2 cup sugar
2 eggs, slightly beaten
1/4 teaspoon salt
1/2 cup raisins
1 teaspoon cinnamon or nutmeg

Directions: Pour over bread crumbs. Mix and bake for 40 -60 minutes. Serve with Bread Pudding Sauce.
