Dumplings - Good

Grandview, IN

 

2 cups flour

1 teaspoon salt

1 cup buttermilk

½ teaspoon soda

1 tablespoon lard

 

Mix and roll out thin on floured board. Cut in small strips or squares.

Waffles-Sour Milk

(8 Waffles)

2 cups flour

1 tsp baking powder

2 eggs

½ cup melted fat (I use Wesson Oil)

½ tsp salt

½ tsp soda

1 cup sour or buttermilk

 

1 Sift flour once before measuring

2 Measure and sift together dry ingredients 2 times

3 Beat eggs until light

4 add sour milk and melted fat to eggs

5 Combine liquid and dry ingredients

6 if batter is too thick, add more milk

7 Bake in waffle iron

8 Serve hot with butter, maple, caramel syrup, maple cream or honey

Sweet Milk Griddle Cakes

3 cups flour

4 tsp baking powder

2 cups milk

2 Tbsp melted fat or salad oil

¼ cup sugar

1 tsp salt

1 egg

 

1 Sift flour once before measuring

2 Measure and sift together flour, salt and sugar

3 Beat eggs until light

4 Add milk and melted fat

5 Combine with dry ingredients

6 Cook on hot griddle

7 Serve hot with syrup, honey or jelly

Corn Bread

Methodist Church

Grandview, Indiana

1955

 

1 cup corn meal

2 cups sifted flour

2 eggs

¼ cup sugar

¼ cup fat

1 ½ cups sour milk

1 tsp salt

¾ tsp soda

3 tsp baking powder

 

Sift together flour, corn meal, sugar, salt, soda and baking powder .

Add sour milk, beaten eggs and melted fat.

Bake.

Muffins

1 egg, unbeaten

1 cup sugar

½ cup shortening

1 cup sweet milk

2 heaping tsp baking powder

Vanilla

Enough flour for a soft dough

 

Drop in a greased muffin pan and you have 16 nice sized muffins.

Ice Box Rolls

Mix together in large mixing bowl:

1 cup warm water

¼ cup sugar

½ tsp salt

1 Tbsp shortening

 

Mix in measuring cup:

¼ cup warm water

1 cake yeast

2 tsp sugar

 

Let two mixtures cool for about 20 minutes.

 

Mix both mixtures and add 2 cups flour (sifted) and mix well.

 

Add 2 more cups flour. Mix this well, then cover and let rise at room temperature.

Light Buns

1 cup light bread dough

½ cup sugar

1 tsp salt

lard, size of egg

2 cups lukewarm water

Flour to knead smooth

 

Let raise 4 or 5 hours. Mix out in pan in buns(wording in recipe), leaving a space between each one. Grease well. Let raise until light. They cannot get too light, but do not touch for they will fall.

 

Bake 20 minutes.

Rich Light Bread Rolls

Makes 18. Double recipe for more rolls.

Combine:

½ cup scalded milk

¼ cup shortening

1 Tbsp sugar

2 tsp salt

 

Cool to lukewarm by adding ½ cup water.

Add 1 package yeast, compressed or dry.

Mix well. Blend in 1 egg.

Add gradually 3 cups sifted flour.

Mix until dough is well blended and soft.

Place in greased bowl and cover.

Store dough in refrigerator or cold place at least 2 hours. Will keep up to a week in a cold place.

Shape chilled dough on well floured board.

Make into any desired rolls.

Let raise in warm place 1 ½ hours or until light.

Bake in hot oven, 425 degrees, for 20 minutes.

Swedish Tea Ring

Mix together:

2 cups lukewarm milk

½ cup sugar

2 tsp salt

 

Crumble into mixture 2 cakes yeast.

Stir until yeast is devolved.

 

Stir in:

2 eggs

½ cup soft shortening

7 to 7 ½ cups sifted all-purpose flour.

 

Roll dough into oblong 9” x 18”.

Spread with 2 tsp softened butter and sprinkle with cinnamon.

Roll as you would a jelly role and place sealed edge down in a ring on lightly greased baking sheet.

Join ends of ring and seal.

With scissors make cuts 2/3 of the way through the ring at 1” intervals.

Turn each section on its side.
Let raise and bake 25 to 30 minutes in oven temperature 375 degrees.

Frost while warm and decorate with nuts.

Good Yeast Biscuits

1 Tbsp lard

¼ cup cold water with 1 cake yeast

1 ¾ cup lukwarm water

6 cups flour
