Cream of Tomato Soup

1 pint tomatoes
2 teaspoons sugar
1 teaspoon soda
1 teaspoon salt
Pepper
1 quart milk
1 slice onion
¼ cup flour
¼ cup butter or oleo
Stir Sugar into tomatoes.
Add soda and seasonings.
Scald milk in double boiler with the slice of onion.
Add flour blended with butter. Cook thoroughly.
Add tomatoes to milk slowly.
Serve at once.

Meatless Vegetable Soup

1 pint tomatoes
5 medium sized potatoes
1 onion
1 cup spaghetti
2 quarts cold water
After the vegetables and spaghetti are tender, add butter size of egg.
Heat 1 pint of milk into which ¼ tsp soda has been added.

Scotch Soup

2-1/2 quarts of water
1-1/4 cups rolled oats
5 potatoes cut fine
2 onions slices
2 tablespoons flour
2 tablespoons butter
Boil water and add oatmeal, potatoes, and onion with salt and pepper to taste.
Cook ½ hour.
Brown flour with butter and add to soup.
Cook until thick.
Add 1 cup cooked tomatoes.
Makes enough to serve five.

1 pound hamburger, fried with an onion
1 pound spaghetti, boiled tender
Put in Casserole together with No. 2 can Kidney Beans and
a can of tomato puree.
Top with ¼ pound cheese, cut fine.
Bake in hot oven 30 minutes.

Meat Loaf

1 pound Ground beef
1 medium onion, chopped
2 stalks celery, chopped, leaves and all
1 egg
2 pieces toast, crumbled fine
Mix well, add salt and pepper.
If mot moist enough, use 2 tablespoons milk.
Shape into a loaf.
Flour and brown the entire loaf in bacon grease.
Remove from pan.
Add flour to the grease and brown. Add water to make a thin gravy.
Replace the loaf and add enough water to come half-way on the loaf.
Place in oven325 to 350 degrees. No lid.
Keep of loaf covered with tomato sauce and baste.
Don’t cook too done.
Tomato Sauce
¾ cup tomato catsup
¼ cup vinegar
2 tablespoons Heinz 57
2 tablespoons Worcestershire

Oats-Date Flavored

2 cups quick cooking oats
4 cups water
4 California dates, chopped
1 tsp. Salt
Bring water to a boil, add salt, chopped dates, oats, stir and cook 1 to 3 minutes.

Macaroni and Cheese

½ pound Macaroni
½ pound American Cheese
½ cup Milk
1 – 11-ounce can Cream of Mushroom Soup
1 teaspoon grated Onion
Cook Macaroni in boiling water until tender.
Drain and rinse in cold water.
Cut cheese in ½ inch cubes.
Combine soup with ½ cup milk and grated onions. Blend in.
Arrange alternating layers of Macaroni, cheese and soup in buttered baking dish.
Top with grated cheese and Bake at 350 degrees 45 minutes or until thoroughly heated and lightly browned.

Salmon Loaf

1 Medium Can Salmon
8 Crackers
1 egg
2 Tablespoons Milk
2 Tablespoons Flour
1 Tablespoon Hot Pepper Sauce
2 Tablespoons Catsup
1 Tablespoon Sugar
1 Tablespoon Salt
¼ Cup Diced Celery
Mix all ingredients in bowl.
Make a loaf, use more crackers, if necessary, to hold together.
Spread catsup on top.
Bake until brown.

Chicken Pie

Cook Chicken until tender. Salt and Pepper and place meat in baking dish.
Add sauce made as follows:
Melt 3 Tablespoons Butter add 3 Tablespoons Flour, Brown.
Add 5 cups Chicken Broth and 1 cup Rich Milk or Cream.
Pour over the Chicken and place in oven to heat through.
Cover with the following batter:
Sift together 2 cups flour, ½ Teaspoon salt, and 2 heaping Teaspoons Baking Powder.
Work 2 Tablespoons Butter into the Flour.
Add 1 well-beaten Egg and 1 Cup Milk.
Beat to a smooth batter and pour over Chicken.
Bake 30 Minutes.

3 pounds Beef
1 pound Pork
1 pint Oysters or 1 pint nuts
6 slices Whole Wheat bread, ground
4 Eggs
1 pint Milk
1 level Teaspoon Salt
1 level Teaspoon Pepper
2 level Teaspoons Baking Powder dissolved in Milk
Bake 3 or 4 hours in slow oven.
Let set 1 hour before serving.

Barbecued Hamburgers

Mix together and fry:
2 pounds Hamburger Meat
1 cup Oat Meal
½ cup Milk
¼ cup Onion
½ teaspoon Salt
Mix in pan foe Sauce:
½ cup Chili or Tomato Sauce
¼ cup Molasses
2 tablespoons Worchestershire
1 tablespoon A-1 Sauce
¼ teaspoon Black Pepper
2 teaspoons Salt
4 teaspoons Dry Mustard
½ cup water
½ cup Onion
¼ cup Vinegar
Mix together and simmer for several minutes.
It is then ready for hamburgers.

Barbecue

2 or 2-1/2 pounds Pork Roast.
Flour the meat and brown on all sides in hot fat, then add water and cook until done.
Cut meat off bone and cut into small, thin slices, like Barbecue.
Put the meat back in the broth in which it was cooked and Add
about 1 ½ Tablespoons Salt
Pepper
¼ cup Vinegar
heaping Tablespoon Sugar
½ bottle Catsup
about 3 Tablespoons Worchestershire Sauce.
I usually season this to my own taste.
Add this to the meat and broth and cook about 10 minutes.

Thin Barbecue Sauce (For Spareribs)

1 pint Vinegar
½ cup water
1 Teaspoon Dry Mustard
2 Tablespoons Minced Onion
½ cup Worchestershire Sauce
½ cup Tomato Catsup
½ cup Chili Sauce
½ Cup Lemon Juice
1 Clove Garlic, tied in small bag
Mix together and simmer 20 minutes to blend seasoning. Remove Garlic.
This may be stored in refrigerator until needed.
